This one has been a Wine Works favorite for many years and now it is time to divulge the secret. We like to use Atualfo Mangos, the little yellow ones, they are the creamiest! Warning, they are very hard to find in the month of September. I use lovage as the herb in this salad, I grow profuse amounts of it. If you can’t find any, cilantro makes a good substitute.

Jicama, peeled and chopped into thin strips (like Hickory Sticks)
Mangos, cubed. You can also use peaches, blue berries or strawberries
Lime, Zested and juiced
Chopped Lovage or cilantro
Mango juice or orange juice



The key to the success of this recipe is in the balancing of the lime juice with the honey. Lime juice is quite acidic but the sweetness of the honey masks that acidity, revealing the zesty lime flavour beautifully. Mix the Jicama sticks, the cubed mango and the chopped lovage. Pour the lime honey mango juice mixture over top and mix it all in. Let stand for a few hours before serving to let the flavours meld together. It is even better the following day, if there is any left.
